Meet Chef Nico

Chef Nico brings fire, finesse, and fierce heart to the plate. 

Originally from Sardinia, Italy, and trained in leading kitchens across Italy, London, and France, Nico now leads the culinary vision at NeverEnding.

With a background in fine dining and a passion for elemental, open-fire cooking, Nico’s food philosophy is rooted in storytelling. Every dish is guided by seasonality, inspired by native botanicals, and plated with deep intention.

For this one-night-only experience, he’s crafted a seven-course tasting menu that honours the land - showcasing local produce at its peak through dishes that feel both familiar and surprising. 

Expect thoughtful textures. Unexpected pairings. And bold, nourishing flavours that linger.

The Ingredients: Picked, Foraged, Celebrated

The menu leans into garden-grown ingredients - some harvested just hours before service - layered with rich proteins, slow-cooked meats, and bold seasonal flavours. Think heirloom vegetables, edible flowers, wild herbs, native fruits, and bush honey - all paired with deeply satisfying, beautifully plated dishes that celebrate the land in every bite.

Every course is paired with a curated wine from regional and international producers, handpicked to elevate the flavours without overpowering them.

The Setting: Beneath the Stars, Among the Trees

Mount Annan’s Australian Botanic Garden isn’t just the backdrop - it’s the soul of this event.

Guests will dine under open skies, surrounded by towering trees, native blooms, and the gentle hum of evening birdsong. The long-table will be lit by warm candlelight, scattered among flowers, creating an atmosphere that’s both elevated and deeply grounding.
